Marinated Red Onions
This is a quick and easy alternative to pickling onions with the same satisfying zing!
INGREDIENTS:
1 red onion, peeled and thinly sliced
1 C red wine vinegar
2 T salt
1 T pepper
INSTRUCTIONS:
Place thinly sliced onions in glass jar.
Pour vinegar over the onions. Adding more if necessary to completely cover the onions.
Add salt and pepper. Put lid on jar and shake well to combine.
Refrigerate for at least 1 day before serving.
