Marinated Red Onions

 

This is a quick and easy alternative to pickling onions with the same satisfying zing!

INGREDIENTS:

 
  • 1 red onion, peeled and thinly sliced

  • 1 C red wine vinegar

  • 2 T salt

  • 1 T pepper

INSTRUCTIONS:

 
  • Place thinly sliced onions in glass jar.

  • Pour vinegar over the onions. Adding more if necessary to completely cover the onions.

  • Add salt and pepper. Put lid on jar and shake well to combine.

  • Refrigerate for at least 1 day before serving.

Onions will keep several weeks in the fridge. 

It's very important to have sharp knife in order to slice onions thin enough. This is the one I use - a great knife under $50. Or to get even thinner onions without all that pesky slicing, try spiralizing them on a spiralizer like this one.
